1. Banana Toast

Ingredients:  

  • Wheat Bread

  • Peanut Butter

  • Banana

Toast the wheat bread until it is extra crispy. Then spread a teaspoon of peanut butter on the toast. Cut a ripe banana into slices and add the desired amount on top.

2. Strawberry Sorbet

Ingredients: ​

  • Strawberries

  • Honey or Agave

  • Lemon

Rinse and cut a box of strawberries into quarters. Put them in the freezer for 2-3 hours. Next, put the strawberries in a food processor with a teaspoon of honey or agave. Cut a lemon in half and squeeze half of its juice into the strawberry-honey mixture. Blend all of the ingredients together. Put the mixture into a container with a lid and allow it to freeze overnight.

3. Rice Crispy Treats

Ingredients: ​

  • Rice Crispy Cereal

  • Butter

  • Marshmallows

Melt 6 tablespoons of butter in a medium saucepan on medium to low heat. Then add 6 cups of mini marshmallows to the pan. Stir until completely melted. Once melted, add 6 cups of rice crispy cereal. Mix gently so the cereal won’t get crushed. Press this mixture into a 9×11 inch pan and allow to cool. Cut into squares.

4. Cucumber Salad

Ingredients: ​

  • Cucumbers

  • Spring Lettuce

  • Vinaigrette

Rinse and cut a cucumber into bite-size cubes. Next rinse 3 cups of spring lettuce. Combine both into a bowl and drizzle a tablespoon of vinaigrette over the salad.

5. Jalapeño Poppers

Ingredients:​

  • Jalapeños

  • Bacon

  • Cream Cheese

Rinse and cut a desired number of jalapeños into halves. Fill each half with a teaspoon of cream cheese. Next wrap each cream cheese jalapeño with a piece of bacon. Use a toothpick to keep it in place by sticking it through the middle. Bake them in the oven for 20-25 minutes until the bacon is fully cooked and crispy.

6. Avocado Quesadillas

Ingredients:​

  • Avocado

  • Queso Chihuahua

  • Flour Tortillas

Cut an avocado into vertical slices and set aside. Next, grate or buy pre-grated queso chihuahua. The amount of cheese varies depending on how much cheese you like. Heat up a medium sized pan that’s big enough for the tortilla. Heat up a tortilla and once it is cooked on one side, flip it over and put the cheese on the already hot-cooked side. This will melt the cheese easier and quicker. Add the desired amount of avocado slices and close the tortilla in half.  

7. Ice Cream

Ingredients:​

  • Heavy Cream

  • Can of Sweetened Condensed Milk

  • Cookies, Fruit, or anything you enjoy in ice cream

Using a hand mixer, whip up 2 cups of cold heavy cream until fluffy. Next, fold in one can of sweetened condensed milk. You want to do this gently so that the mixture does not lose any of its air. It should be light and creamy. Next, add your choice of candy, cookie, or fruit. Mix again. Transfer ice cream mixture into a container that has a lid. Let it freeze overnight.

8. Spicy Lime Jicama

Ingredients:​

  • Lime

  • Tajin

  • Jicama

Rinse and chop jicama into bite-sized pieces. Next, cut a lime in half and drizzle its juice over the jicama. Coat this combination with a teaspoon of tajin.

9. Cheese Sticks

Ingredients:​

  • Egg Roll Wrappers

  • Mozzarella Cheese Sticks

  • Frying Oil (canola or vegetable)

Layout the desired amount of egg roll wrappers and lightly coat each one with a tiny amount of water. Cut mozzarella cheese sticks in half. Place each half of a mozzarella stick into the egg roll and wrap them tightly. Heat up 2-3 cups of oil (enough to fill your frying pan ⅛ inches high). Next, fry the mozzarella sticks about two minutes per side until they are golden brown and crispy. Let cool.

10. Sweet Biscuits

Ingredients:​

  • Canned biscuits

  • Butter

  • Syrup

Bake a can of your choice brand of biscuits. Follow the cooking directions on the can. Once cooked, cut each biscuit in half and coat it with a tiny amount of butter and a drizzle of syrup. Serve while it’s warm.
