Magically Delicious St. Patrick’s Day Recipes

Everyone celebrates St. Patrick’s Day differently. Those who aren’t Irish may choose to treat it like any other normal day, while others use it as an excuse to go out and drink green beer until their heart’s content. If you’d rather express your holiday spirit in a creative way, St. Paddy’s is the perfect day to get in touch with your inner Betty Crocker. There are dozens of adorable, Instagram-able recipes out there, no matter what your baking skill level may be. Below are a couple of my favorites:

Leprachuan Hat S’mores Here’s what you’ll need:

  • Keebler Fudge Stripe cookies
  • Large marshmallows
  • Dark chocolate bar
  • Green frosting
  • Green sprinkles or edible sparkles

Here’s how to make them:

  1. Cut the chocolate bar into chunks, place them in a bowl, and microwave it in 20-second intervals. Stir between each interval to ensure that it doesn’t burn. Repeat until completely melted.
  2. Dip fudge stripe cookies in the melted chocolate, and set them on parchment paper with the top-side facing down.
  3. Using a toothpick or skewer, dip marshmallows into melted chocolate. Set on parchment paper until they’re dry.
  4. Cover the top of the marshmallows with enough green frosting to make a small band of green around the bottom. Add green sprinkles or edible sparkles on the frosting if you want to add a cute touch o’ texture.
  5. Place marshmallows in the center of each chocolate-covered cookie.
  6. Carefully draw a shamrock design on each treat using frosting and a toothpick.

Rainbow Rice Krispie Treats Here’s what you’ll need:

  • Marshmallows
  • Butter
  • Rice Krispies cereal
  • Food coloring

Here’s how to make them:

  1. Spread butter in a glass 9-by-3-inch pan.
  2. Melt 1½ tablespoons of butter in a pot on medium heat so that it doesn’t burn. Add 1½ cup of marshmallows and stir until they’re melted.
  3. Add one food coloring to the mixture in the pot. Stir and keep adding coloring until the desired shade is reached.
  4. Remove pan from the burner, and add 1½ cup of Rice Krispies. Stir well until all of the cereal is coated in the color.
  5. Pour the mixture into the buttered pan, and spread evenly.
  6. Repeat steps 2-5 with all the colors of the rainbow until the pan is filled.
  7. Cover the pan, and allow it to cool before cutting and enjoying!

You don’t have to be Irish to have a deliciously fun St. Paddy’s Day. If you’re really feeling spirited, break out the corned beef and cabbage! Then again… maybe you should just stick to the Rice Krispies. Enjoy, collegiettes™!
