Dishes ‘n’ DIYs: Not your Average Quesadilla

Don’t get me wrong, I love my cheese quesadillas, but they just don’t compare to the deliciousness of this peanut butter, chocolate, banana and strawberry quesadilla. It can be made as a breakfast option or a healthy low-calorie dessert—either way, it is heavenly. I think it’s time for me to admit that I may have a slight obsession with peanut butter. I love peanut butter on just about everything, but I have never tasted a combination quite like peanut butter with chocolate, bananas and strawberries. It’s like an actual explosion of flavor when the chocolate melts into the peanut butter and the strawberries roast with the bananas. This guilt-free recipe is wonderful for sharing (although nobody will judge if you decide to eat it all yourself), and it takes less than 10 minutes to make.

 

What you’ll need:

  • 1 8-inch whole wheat tortilla
  • 2 tablespoons creamy peanut butter
  • 1 ripe banana, sliced
  • 4 strawberries, sliced
  • 1 tablespoon chocolate chips
  • cooking spray

How to make it:

1. Heat a medium skillet over medium heat, and spray it with cooking spray.

2. Spread the peanut butter over the surface of the tortilla.

3. Arrange the sliced banana and sliced strawberries over half of the tortilla.

4. Sprinkle the chocolate chips over the sliced banana and strawberries.

5. Fold the tortilla in half and gently press together.

6. When the skillet is hot, add the quesadilla, and cook it until both sides are golden brown and crispy.

7. Cut the quesadilla into halves or quarters.

Overall, this guilt-free recipe is perfect. Not only are whole-wheat tortillas and peanut butter good carbohydrates and healthy fats, but they also keep you feeling full longer. Plus you get your daily dose of fruit as well! If you’re looking to get creative, try drizzling chocolate sauce over the quesadilla, or replace the peanut butter with Nutella. Beware: After trying this quesadilla, you’ll never want to go back to the traditional cheese quesadilla. Get cooking, collegiettes!
