Unless they’ve started already, finals are coming up fast. I’m sure we are all a little stressed., and with stress comes stress eating. Although I wouldn’t encourage too many unhealthy snacks, I happened to find a delicious recipe that can serve as a reminder that summer is almost here: s’mores ice cream. This is the perfect snack to have with friends or when you are finishing up that last all-nighter!
Here’s what you’ll need:
- 1 ½ C of milk
- 3 C of heavy cream
- 1 1/8 C of granulated sugar
- 1 ½ tablespoons of vanilla extract
- 1 C of graham crackers (crushed)
- 1 C of chocolate chips or chunks of your favorite chocolate bar
- 1 C of miniature marshmallows
- Ice cream cones
Here’s how to make them:
- In one bowl, mix the milk and sugar together until the sugar is dissolved.
- Add the heavy cream and vanilla extract. Mix well.
- Pour your mixture into a freezer bowl, and let it freeze for about 30 minutes.
- Put the ice cream into a freezer-safe container, add the graham crackers and chocolate, and stir them into the ice cream until combined. Let it freeze until it reaches a good consistency.
- Scoop the ice cream into a bowl or your favorite ice cream cone!
