Super Bowl XLVI Snacking

It’s that time of year again, the beginning of February when the entire country is about to be glued to their television’s, surrounded by animalistic fans, friends, and family rooting for their team on Super Bowl Sunday—and the Isla Vista student body is no exception to this chaos. Seeing as football is a favorite American passtime, it doesn’t matter which teams are playing because it’s still an excuse to eat party snacks, hang out, and sip a few beers (for the 21 year olds of course).  So grab your friends, gather ‘round the TV, and enjoy some drinking and junk food. Here are some of our easiest and yummiest Super Bowl recipes.

 
Swiss and Bacon Dip

Ingredients:

  • 8 slices bacon, chopped
  • 8 ounces softened cream cheese
  • 1/2 cup mayonnaise
  • 2 rounded teaspoons prepared dijon style mustard
  • 1.5 cups shredded swiss cheese
  • 3 scallions, chopped

Directions:

  • Preheat oven to 400 degrees F.
  • Brown bacon in nonstick skillet over medium high heat. Drain crisp bacon bits on paper towels.
  • In a mixing bowl, combine cream cheese, mayonnaise, dijon, swiss and scallions with cooked bacon.
  • Transfer to a shallow small casserole or baking dish and bake until golden and bubbly at edges, 15 to 18 minutes.
  • Place dip on a platter and surround warm casserole with breads and carrots for dipping.

 
Cookies and Cream Truffles

Ingredients:

  • 1 (18 ounce) package Oreo cookies
  • 1 (8 ounce) package cream cheese

Directions:

  • Crush Oreos in plastic bag
  • Add Cream Cheese and Oreos in bowl and mix together
  • Chill the mixture in fridge for about 5 minutes
  • Roll hunks of mixture into a ball about 1.5 inch wide (shape to look like football if you wish!)
  • Chill before serving
