Breakfast may be the most important meal of the day, but it can also be the most difficult to make due to early morning classes. Instead of skipping the meal completely, you can prepare some ingredients the night before or throw some together within seconds in the morning. Here are some breakfast ideas that you can whip up in no time and easily take with you when you start your day:

1. Peanut Butter, Banana, Strawberry Quesadilla

You can never go wrong with the peanut butter/ banana combo. Add some strawberries in the mix, wrap it in a whole wheat tortilla, and voila! (Sprinkle some cinnamon over it for extra flavor)

2. Yogurt Breakfast Popsicles

It’s like desert for breakfast, but it’s healthy! Mix up the ingredients the night before, pop them in the freezer, and you’ve got a yummy breakfast for the next morning.

Ingredients:

1. 1 cup Greek yogurt (or non-Greek if you’d like)

2. 1/4 cup sugar

3. 2 cups chopped berries

4. 1/4 cup milk

5. 2 tablespoon honey

6. 3/4 cups granola

(Also need a popsicle mold and sticks)

Directions:

Chop berries and stir with sugar in saucepan, then place on stove until thick and jammy. Remove from heat and let cool. Mix greek yogurt with milk, honey, and granola. Continue to pour a layer of yogurt mixture then a layer of berry jam into the popsicle mold until it is full. Insert popsicle sticks, place in freezer until solid, at least six hours. Popsicles will keep in freezer for several weeks.

3. Two-Minute Apple Mug Muffins

It will take you one minute to whip up the ingredients and another minute to let it cook in the microwave.

Ingredients:

1. 1 tablespoon coconut oil

2. 2 tablespoon applesauce

3. 1 egg

4. 1 teaspoon maple syrup

5. 3 tablespoons almond flour

6. 1/2 teaspoon cinnamon

7. 1/8 teaspoon baking powder

8. 1/4 teaspoon vanilla

Directions:

Melt coconut oil in microwave on lower power. Mix applesauce, egg, vanilla, and maple syrup. Add almond flour, cinnamon, and baking powder. Place in microwave for 1 minute, 10 seconds.

4. Over-Night Oats

Mix up the ingredients, place in the fridge, grab the jar in the morning, and go!

Ingredients

1. 1/3 cup rolled oats

2. 1/3 cup greek yogurt

3. 1/2 cup milk

4. 1 tablespoon chia seeds

5. 1/2 cup frozen berries

6. 1 tablespoon peanut butter

Directions

Mix all of the ingredients into a jar and place it in the fridge overnight. In the morning, add more milk if you’d like.

5. Berry-Flaxseed Smoothie

Easy to make and easy to drink as you make your way to class in the morning!

Ingredients

1. 2 tablespoons ground flaxseeds

2. 1/2 cup orange juice

3. 1/2 cup nonfat vanilla yogurt

4. 1 cup frozen mixed berries

5. 1 banana, sliced

Directions

Place all ingredients in blender and mix until desired consistency.
