So midterms have arrived and if you’re like me, you’re probably feeling a LOT like this right now: 

BUT as you may recall, your girl has decided to make her new (school) year’s resolution to learn how to get fancy in the kitchen. I actually learned this recipe from a housemate of mine when I was studying abroad last spring. These are super fun and easy to make Nutella cookies that are 1. a perfect way to satisfy your chocolate cravings and 2. a great roommate bonding activity for when you need a break from all that writing, studying, orrrrr procrastinating with Netflix (hey, I feel you girl!).

What you’ll need: 

  • 1 cup of all purpose flour
  • 1 egg
  • 1 cup of Nutella (or more. All the Nutella.)

Prep: 

  • Pre-heat oven 350 degrees 
  • In a large mixing bowl, mix flour egg and nutella. I find it easiest to start of using a fork and then your hands. The batter should be a thick consistency. 
  • Using your (clean) hands, basically turn the dough into a giant ball. Pro-tip: a friend of mine who is rather good at baking taught me that if the dough is sticking to your hands, there’s typically not enough flour. So you should add pinches of flour as needed. 
  • Pinch off small sections of dough, and roll them in your palms to create ~1 1/2 inch balls 

***Now, this will get sticky and you may find that your dough is sort of crumbly as you’re trying to piece it off into smaller balls. This is due to the nature that we’re only using the 3 ingredients and not putting in all the other fancy ingredients that are usually in cookies. But don’t worry, you’re probably doing it right. 

Baking: 

  • Here’s the beauty of these cookies: you can bake them on a cookie sheet with parchment paper OR simply on a glass bakeware dish with aluminum foil. I’ve done both.
  • Make sure cookies are evenly spaced 
  • Bake for 7-10 minutes

***Key to these cookies is that you need to let them cool before eating! They make look a little gloppy but they just need ~20 minutes to cool down and harden.
