If you haven’t already, pick up some asparagus from the farmer’s market or the grocery store. It’s high in anti-oxidants and a great way to transition into new spring recipes!

If you’re looking for a way to incorporate asparagus into a college classic, try Asparagus Pizza!

Ingredients:

asparagus

yellow onion

pre-made pizza dough

2-3 eggs

olive oil

shredded cheese (Italian blend)

bacon (optional)

Preheat the oven for 400 degrees Fahrenheit. Spread a tablespoon of olive oil on to the baking tray to keep the pizza from sticking. Stretch out the dough and place it on the baking tray. Spread 2 tablespoons of olive oil on the dough. Sprinkle the cheese on top and leave pockets for the eggs to settle into. Crack the eggs into the cheese pockets. Slice up the asparagus and onions and add them on top as desired. Chop up the bacon and place on top. Bake until the egg is cooked — around 20 to 25 minutes.

And instead of boiling the left over asparagus, try broiling it!

Broiled Asparagus:

Ingredients:

asparagus

olive oil

salt

pepper

1-2 cloves of garlic

Time: 15 minutes

After washing your asparagus, lay it on a baking tray. Chop up the garlic and add them on to the asparagus. Drizzle with olive oil. Sprinkle with salt and pepper for taste. Put in to oven on Low Broil for 8-10 minutes until the tops are crisp, but the stalks are tender.

Bonus: Garlic Aioli for the Broiled Asparagus

4 table spoons mayonnaise

1 teaspoon apple-cider vinegar

1 teaspoon olive oil

1 pinch black pepper

2 cloves of minced (finely chopped) garlic

Mix ingredients together and serve with asparagus.

Broiled or Roasted Asparagus is my favorite side with chicken or paired with some potatoes for a vegetarian meal! The broiled asparagus also keeps well and can be added to lunches for later in the week.

Don’t forget to check out the San Joaquin Asparagus Festival in Stockton on April 17, 18, & 19, 2015, only an hour away from campus. Along the asparagus festivities there will be an amazing craft market, a car show, cooking demonstrations (featuring Michael Midgley from “Top Chef”!), carnival rides and live music to enjoy with the famous deep fried asparagus or the refined asparagus ice cream.
