Breakfast is the most important meal of the day and it is important to start off with a nutritious meal. I started to research some recipes to try them out because I felt I was not getting the proper vitamins in the food I was eating. Here are my favorite quick and easy breakfast meals to start your day.
Overnight Oats
This recipe is probably the easiest and the prep time is about 5-7 minutes. Prepare this meal right before you go to bed. You’ll need uncooked oats, a type of milk or water, and chia seeds. Add one cup of oats and one cup of any type of milk or water you desire to a container with a lid. I personally use oat milk. Add one tablespoon of chia seeds to the container. Mix thoroughly and flatten the top of the mixture so there are no lumps. Then close the lid of the container and put it in the refrigerator overnight. The liquid you used in the mix will cook the oats overnight, so in the morning you’ll have oatmeal! Then you can add whatever toppings you like. I like to put some honey, cinnamon, and berries.
Banana Oat Pancakes
Another oat-based breakfast are these banana oat pancakes. The prep and cooking time is about 15 minutes. In a blender, add one banana, ½ cup of oats, one egg, a teaspoon of baking powder, and a dash of vanilla extract. Blend until the mixture has no type of lumps. If the batter is too thick, add a small amount of water. This will be the “pancake batter.” Then add non-stick cooking spray to your skillet and heat it up. Add your batter and flip! This recipe makes about 3 pancakes. I like to add some Greek yogurt, berries, and honey on top of these pancakes to top it off.
Breakfast tacos
Siding away from the oat-based breakfast, these are savory breakfast tacos to start your day. You’ll need ham, eggs, tortillas, spinach, and cheese. This recipe time is about 15 minutes. Add non-stick cooking spray to a skillet and add a piece of ham that is cut into pieces. Let the ham cook. While the ham is cooking, obtain a bowl and crack two eggs into it. Beat the eggs and once the ham is almost done, add your egg mixture to the skillet. Stir the eggs a few times then add spinach to the mix. Cook the meal until it is all complete. Then heat up your tortillas any way you like. This recipe makes two tacos and once you add the egg, ham, and spinach into the tortillas, top it off with some cheese. I also like to add pepper and hot sauce for some flavor.
