Collegiette’s Kitchen: Mini Apple Pies

You will need:

2 12-cupcake pans
3 apples of your choice (I used Granny Smiths)
5-6 tablespoons of brown sugar
2 tablespoons of granulated sugar
3 teaspoons of cinnamon sugar
1 box of pre-made puff pastry (thawed)

  1. Preheat the oven to 350° F. Cut and peel (if desired) the apples and place in a medium-sized bowl. Mix in the brown sugar, granulated sugar, and cinnamon sugar. Place this in the refrigerator for 1-2 hours to marinade.

  2. Take the puff pastry and cut it into squares. Place the squares into cupcake pans. Make sure you have extra left over for the tops of the mini pies.

  3. Fill the squares with a decent amount of apple filling. You do not want the filling to be too high over the lip of the pan. I usually eyeball it to about ¾ in below the lip.

  4. Use the remaining pastry puff and cover the pies in a criss-cross pattern or whatever pattern you would like.

  5. Place the pans in the oven for about 10-15 minutes or until golden on the top.

  6. Let cool and enjoy!
    Serving suggestion: try with a scoop vanilla ice cream.
