Hot Potato

This “pig in the potato patch” is from Jim n’ Nicks. It is a little slice of heaven, but I don’t even want to know how many calories it packs. So, despite indulging in the occasional treat at everyone’s favorite BBQ place in 5 points, I came up with a lighter version. Here’s how to make it yourself!

*(This serves one, so double up the recipe accordingly)

1. .Roast one boneless, skinless chicken breast according to these instructions. 
2. Bake a potato (instuctions here). 
3. Shred the chicken breast with your fork.
4. Cut open potato, fill with shredded chicken. Top with your favorite BBQ sauce.
5. Instead of sour cream, use Greek yogurt. It packs way more protein, with half of the fat. 
6. Top with low fat cheese and your choice of veggies. I like scallions and broccoli, but you can use onions, peppers, or anything else. Get creative!
