The Recipes I Have Made In Quarantine So Far

I have officially gone through my first official wave of baking during quarantine. I love to bake, especially being at my parents house, and it certainly did not help when my sister had her birthday. I usually bake, although I have been doing a fair amount of cooking too. I usually use one website, https://www.melskitchencafe.com/, because her recipes are always so yummy! But every once in a while, I just google a recipe and choose one with good ratings. So here are the recipes I have made so far. 

1. Carrot Cake 

Not to brag, but this was a seriously delicious carrot cake. I hand shredded the carrots and lightly toasted and finely chopped pecans. I added them to the batter and the outside of the cake to create a simple, pretty decoration. Topped with candles, it was beautiful. The cake was delicious and moist and the cream cheese frosting, was literally and figuratively the frosting on the cake.

2. Orange Chicken

My brother loves orange chicken, and since we could not get it from Panda Express, I decided to just make it at home. It turned out amazing and tangy from the oranges! It was pretty easy to whip up too.

3. Fried Rice

What would orange chicken be without fried rice? So I decided also to make fried rice, which was still pretty east and turned out delicious!

4. Texas Sheet Cake Bars

I had a huge craving for chocolate and was reminded of the chocolate cake they used to serve in grade school. And it turned out to be just as amazing as I remember.

5. Apple Pie 

While I did not make the apple pie, I still helped out to form the pie. Either way, it was delicious and actually really comforting during quarantine.

6. Key Lime Pie 

This is just a classic favorite of mine that deserves attention. It is super creamy and tart and delicious!

7. Lemon Pound Cake 

This recipe was was the America’s Test Kitchen cookbook and I added extra zest and juice for fun. It was really yummy and a pound cake really hits the spot when you want something a little more dense.
