Unique & Easy Easter Treats!

On Easter weekend I visited my family in Cloverdale and a collection of desserts filled the table after our ham & turkey feast.

My two favorite desserts were my Mom’s Bird’s Nest and my Aunty’s Chocolate Covered Peanut Butter Crunch. AND THEY BOTH DON’T NEED COOKING!

First, the Bird’s Nest required:  

2 cups- Regular Chow Mein Noodles 
2 cups- Dark Chocolate Chips (or any chocolate chips)
Mini eggs- for the nest filling
Marshmellow chicks

Melt the chocolate in a microwavable bowl, once it’s basically all melted together, mix in the chow mein noodles until they’re fully coated.

The mixture will be thick and easy to handle with your hands! Scoop a ball and lay it onto a cookie sheet, placing mini eggs in the center. 

Make any size you’d like and refrigerate until they’re firm! Piece of cake! 

The Peanut Butter Crunch are another festive dessert you could use for any holiday.

2 cups- Chocolate Chips
1/2 cup- peanut butter (smooth works best)
1/4 cup powered sugar sifted
32 Ritz crackers

Melt the chocolate chips over the oven. While they are melting, in a seperate mixing bowl, whisk the peanut butter and sugar together until smooth.

Spead the peanut butter mixture onto one Ritz and make a sandwich by placing another on top.
Then using your hand or tongs, dip the sandwich into the melted chocolate, ensuring the whole sandwich is covered.
Then place each cookie on a cookie sheet lined with parchement paper & FREEZE!
For Easter, my aunty sprinkled colorful sprinkles ontop before they were frozen, giving it an Easter touch!
