Easy and Cheap Recipes for University Students

Are you just moving into your apartment? Struggling to feed yourself and find recipes that are in your budget and don’t take a million hours to do? Well, this article is for you. Here are three easy and cheap recipes for broke university students! All of these recipes serve one with leftovers.

Dumpling Soup

Frozen dumplings are probably the thing I eat the most. They’re easy and one pack lasts me almost a full week. As the weather gets colder though, I’ve tried making a spin on it to warm myself up after a long day of classes.

What you’ll need:

-1 pack of frozen dumplings

-3 cups of broth of your choice (can be chicken, veggie, beef, or you can experiment too)

-Toppings of your choice (green onions, mushrooms, potatoes, bokchoy, etc…)

Steps:

1. Follow instructions on frozen dumplings pack.

2. Warm up broth in a pot on low to medium to heat until it simmers.

3. Add your dumplings and vegetables.

4. Serve in a bowl

Chickpea Rice Bowl

I recently heard of this recipe from my friend, it’s her usual meal as someone living in clusters. Easy and customizable, it can be adapted to anyone’s personal taste.

– A handful of chickpeas

– ½ cup of rice

– 1 cup of water

-Fried veggies (broccoli, peppers, mushrooms, carrots)

-Condiments/topping of choice (crushed nuts, herbs, sauces)

-Optional: Meat (grilled frozen chicken ect..)

Step 1: Put water and rice in bowl. Set it to boil.

Step 2: When boiling bring down to minimum, cover and let cook on low from 10-12 minutes.

Step 3: When there is no water left it’s ready. Let sit for 5 minutes.

Step 4: Take out a pan and put a little oil on it. Add your veggies to pan with medium to high heat.

Step 5: Cook on pan until golden brown while regularly mixing. Around 3-5 minutes.

Step 6: Preheat oven to 425 degrees.

Step 7: Put chickpeas on a baking sheet lined with parchment paper.

Step 8: Dry them with a kitchen towel and add a drizzle of oil.

Step 9: Cook for 20-30 minutes. Take out when golden brown.

Step 8: Add everything to your bowl.

Step 9: Enjoy!

Egg Muffins

I first learned this recipe at a baking club when I was younger. Easy enough for a ten-year-old to make, it’s delicious and definitely a staple in my own kitchen. It can be made for breakfast, lunch, or dinner and can definitely become a household favorite.

What you’ll need:

-2 eggs

-1/4 cup of milk

-Any toppings of your choice (I use ham and bell peppers or any leftovers I have but you can also use cheese, green onions, spinach)

Step 1: Preheat oven to 350 degrees.

Steps 2: Mix eggs and milk in small bowl.

Step 3: Butter or grease the inside of the muffin tin.

Step 3: Add mixture to muffin tin. Don’t overfill the moulds, keep about 3 centimetres under the top of the mould.

Step 4: Add your toppings on top of your mixture and mix it in.

Step 5: Bake in the oven for 20 minutes. Check with a toothpick to see if it’s ready.

Step 6: Enjoy!
