5 Pumpkin Recipes for Fall

Fall is the perfect time to do some experimenting in the kitchen, and now that it’s October, it’s not weird at all to make literally everything pumpkin flavoured. Whether you’re just obsessed with pumpkin, or you’re like me and bought three huge cans of pumpkin purée thinking it would only last a couple recipes, we’ve got you covered. These are the most delicious recipes I have found, and they all use relatively accessible ingredients you probably already have in your kitchen! Student tip: instead of buying all the separate spices these recipes call for, get a tin of ‘pumpkin pie spice’- that is just a mix of all the ones you would need anyway!

 

Starbucks Pumpkin Scones 

Everyone I have ever made these Pumpkin Scones for has absolutely loved them. They’re definitely easy, and you won’t have to buy cupcake wrappers or spend the time making unruly icing. It’s also really easy to double the recipe! They’re quick to mix, bake, and decorate, so they’re perfect for a potluck or gathering. 

Pumpkin Cookies 

Probably my favorite recipe of the bunch, these cookies are incredible. Like actually melt-in-your-mouth incredible. Now they call for a lot of butter- like A LOT of butter, but that’s what makes them so soft and fluffy. If you’re looking for something healthy you might want to look somewhere else, but I promise you won’t regret making these, and neither will your roommates. Warning: this recipe makes a ton of cookies. Like more cookies you think you could ever eat but somehow they’ll still be gone in two days.

Pumpkin Spice Latte 

That’s right, you can have your very own home made pumpkin spice latte for less than $6 a cup. I personally like this syrup better than any coffee shop kind, and it’s easy to make and stores for a while in your fridge. I have one of those reasonably cheap stove top expresso makers, like this one that I use for the coffee, but if you don’t want to buy that you can still mix the syrup in with your regular drip coffee and a bit of milk. 

Pumpkin Pie Poptarts 

You heard me right. Pumpkin pie Poptarts . They’re even tastier than you’d expect them to be, and I have some high expectations. They’re quite easy to make, which is always a bonus for me. The recipe calls for a food processor for the batter, but I think I got away without it. It also uses cream cheese in the filling, which is obviously delicious but also expensive. You can try Greek yogurt instead, only because it doesn’t call for that much cream cheese anyways.

Pumpkin Cupcakes 

Another crowd pleaser, these cupcakes double as muffins and hardly have any sugar in them. The recipe also uses oil instead of butter, which if you’re like me is super nice when you’re too lazy to pull out the electric mixer. This recipe doesn’t include a frosting, but you can try a cinnamon cream cheese one like I did that worked perfectly. There’s a lot of room to play with these ones, and you can find some cute Halloween decorations at Michaels right now (don’t forget to get a coupon online first!) to make them look as good as they taste.
