Healthy, Fast-Casual Restaurant “Salads UP” to Open This Week

This article is written by a student writer from the Her Campus at U Mich chapter.

A new fast-casual and incredibly healthy restaurant is opening up downtown this week. Salads UP will make its official debut in Ann Arbor and it’s sure to revitalize your healthy eating game for good. Located on 611 East Liberty St. right next to American Apparel, Salads UP is unmistakable with its bright kelly green sign.

Salads UP caters to both the local atmosphere of ‘townies’ in the area while also providing a place in which Michigan students would want to come. Who better to identify what Michigan students want than the creators of the company and 2013 Michigan graduates, Robert Mayer and Max Steir. In addition to their delicious salads, Salads UP offers cold pressed juices, soups, and wraps, along with 40 types of organic fruits and veggies to top salads with.

I sat down to interview Rebecca Rosenthal, a sophomore and current CCO of the company. As the CCO, or Chief Creative Officer, Rosenthal manages all forms of marketing and creating aspects. She juggles a lot of moving parts on a daily basis while still managing a full time workload at Michigan.

Her Campus: How did you get into this position?

Rebecca Rosenthal: The owners, one of which was the older brother of one of my closest friends, had the idea as seniors to open a fast casual healthy dining experience in Ann Arbor to cater to both students and localites. I was really excited about it and really interested in its potential, so I got on board.

HC: What’s your favorite thing on the menu?

RR: We have really great mix-it-up salads and create your own salads, but of the signature salads on our menu, I’d order the Kale Caesar! Caesar salads are my favorite, and Kale is full of antioxidants.

HC: Tell us something that sets Salads UP apart from other food places in the city.

RR: All of our produce is catered by local produce suppliers, benefitting local food distributers in and around Ann Arbor. I’m more than excited to eat my way through the menu.

HC: Where do you expect to go from this position?

RR: I’m going to be an instrumental part of the process and see the restaurant through this completion and through the rest of my college career, for sure.

HC: Why is salad’s up appealing to you?

RR: It’s a super young company. Everyone here is under the age of 26, the oldest being our general manager. We all really get along because we have the same visions. It’s so important to understand the market, and we understand what the consumer wants. It’s just a very youthful and exciting place.
