Mouthwatering Thanksgiving Recipes: Vegetarian Style

This article is written by a student writer from the Her Campus at U Mass Amherst chapter.

Many of us vegetarian Collegiettes struggle during this time of year. I’m talking about Thanksgiving, when we are surrounded by turkey and dishes that we can’t eat because they contain meat. Have no fear because here are five simple and mouth-watering vegetarian dishes you and your family can make for Thanksgiving! They are all super simple and all the necessary ingredients can be purchased at your local grocery store.

1. Apple Cider Brussels Sprouts Click on the link for an unreal recipe that will make even your little brother or sister ask for seconds:

2. Stuffed Portobello Mushrooms This seems like a perfect way to fill you up, with fewer calories too.

3. Thanksgiving “Burger” This one doesn’t call for any meat, but will make you feel like you just ate a huge burger…that’s made from leftovers and veggies.

4. Sweet Potatoes & Lentil Shepherd’s Pie  This is perfect with melted cheese on top and could be served hot or cold, which means yummy leftovers:

5. Caramel Pumpkin Cheesecake Need I say more? This is a perfect Thanksgiving dessert and it’s great to make during fall:

Even if you aren’t a vegetarian, these recipes sound so easy to make and so delicious! You can even add some turkey into these dishes to make them suit the non-vegetarians at your Thanksgiving meal. Making these dishes with your family can also be a great activity when you go home for break. Happy cooking and happy Thanksgiving, Collegiettes!
