Recently, I have become sort of obsessed with trying different soups (and retrying some, too). Soups are the perfect fall and winter food. They are warm, comforting, and they taste really good. I feel like times have been stressful for everyone these days, so here are four soups that can soothe the soul. 

Butternut Squash Soup

Butternut squash soup might be my favorite soup. It’s smooth and creamy while also extremely comforting (and it’s pretty easy to make). You basically just cook all the ingredients and then just toss it in a blender. Now, you have a delicious soup. I would suggest roasting the squash rather than boiling because it really does make a difference. If you struggle with peeling butternut squash (because it can honestly be pretty difficult), they sell it pre-peeled at most grocery stores. The best part about this soup is that you can easily make it vegan by using vegetable broth instead of chicken broth, and coconut milk instead of heavy cream. I would highly reccommend giving this soup a try — it really is like fall in a bowl!

Ramen

To me, ramen is a comfort staple. Whether it’s a traditional soup from scratch or the Top Ramen brand from the grocery store, it never fails to warm me up. There are so many ways to make it and a huge variety of flavors, so it’s almost impossible to find one you don’t like. Eating ramen brings me back to when I would be sick as a kid. My mom would cook me some Top Ramen in the microwave and make grilled cheese on the stove. Now, whenever I have ramen I think of staying home from school or snow days. Ramen is a great way to warm you up and make you feel better. 

Chicken Noodle Soup

This is a sick day classic. It is warm and cozy and perfect for a cold day indoors. The best thing about chicken noodle soup is that you can really have your own take on it and alter the flavors to your liking. The classic version never disappoints, and it’s pretty easy to make. The aromas from this soup will fill your house and lift the spirits of everyone in it.

Chicken Gnocchi Soup

If you have ever had this soup from Olive Garden you know it is amazing! The best thing is that it’s so easy to make from home. If you like creamy soups over brothy soups, this is the one for you. The soup is thick and rich with gnocchi, chicken, shredded carrots, celery, and spinach. You can make the gnocchi from scratch, or if you want the easy way out like me, they sell it in the pasta aisle. If you want the full Olive Garden experience, you can even try making their classic breadsticks.
