While you’re switching your wardrobe from winter to spring, try these cheap delicious and refreshing spring sandwiches!

Grilled Chickenand Apple Melt

Ingredients:     
·         1 can dark and light meat chicken, drained
·         3 table spoons of mayonnaise
·         1 table spoon lemon juice
·         1 slice of Swiss cheese
·         1/2 stalk of celery, chopped
·         1/4 apple, chopped
·         1/4 grated carrot
·         2 slices of wheat bread
·         1 teaspoon of butter
 
Prep:
In a small bowl combine chicken, mayo, lemon juice, celery, apple and carrot. Spread outside of sandwich bread with butter and place on a pan to toast bread. Add slice of
Swiss cheese on one piece of the bread. When cheese is melted, add your chicken
salad mixture to the bread and enjoy!

Tropical Turkey Sandwich

 Ingredients:

  •  2 slices of heat bread
  • 1 dab of mango chutney, spread on one piece of bread
  • Dijonmustard, spread on the other piece of bread
  • 3 thin slices of turkey
  • 1 slice of provolone cheese
  • 1/3 of an avocado spread across the top

 
Prep:
To make this sandwich a melt, butter the tops of the bread and grill for a few minutes while the cheese melts. Add ingredients after.

Macey Hall is a senior at the University of Maine studying Journalism with a minor in Sociology. She loves fashion and traveling, and studied abroad last year in England.
