Summer is hours away, which means barbeques, bonfires and bathing suits. Although the party scene increases during the long waiting summer break, you weight should not.
 
Summer is the best time to shop for fresh ripe fruits and colorful vegetables. Next time you’re at the grocery store, stock up! It is always vital to have lots of fruits and veggies on hand in the summer, whether your roasting peppers and onions over the fire or putting the perfect fruit garnish on your cold summer cocktail drink. Enjoy these cool refreshing summer favorites. It is a perfect way to kick off summer!
 

Cajon Salmon Kabobs
 

Ingredient:
½ teaspoon ground cayenne pepper
1 ½ Cajon seasoning
½ red pepper cut into squares
½ green pepper cut into squares
½ onion cut into squares
2 ¼ Ibs skinless salmon filet, cut into 1 ½ inch chunks
 
 
Directions:
Soak bamboo skewers in hot water for at least 30 minutes. Prepare outdoor grill for direct grilling on medium heat. Toss Salmon chunks into Cajon and cayenne spices. Thread peppers, onions and salmon, alternating the order, on the bamboo skewers. Place on hot grill grate and cook 9-11 minutes, turning occasionally.
 
 
 
Layer Bean Dip
 

Ingredients:
1 square low fat cream cheese
¼ cup chunky salsa
½ can black beans, drained and rinsed
½  green pepper, chopped
½ chopped tomato
½ onion, chopped
2 tbsp chopped scallion
½ cup shredded mozzarella cheese
Tortilla chips
 
Directions:
In a large bowl mix cream cheese and salsa together. Spread cream cheese mixture evenly on a circular or square 1 ½ inch deep platter. Next sprinkle beans, then pepper and onion, spreading tomato and scallions evenly on platter. Lastly sprinkle cheese on top and dip chips in getting all the layers!
