5 Recipes to Have the Best Vegan Thanksgiving

This article is written by a student writer from the Her Campus at U Conn chapter.

Thanksgiving is quickly approaching, and when you’re just starting your vegan journey this holiday can instantly go from being a very pleasant to a very dreadful experience. You may think that having a vegan Thanksgiving is extremely hard, but these Thanksgiving recipes will prove you wrong, and in a delicious way. Here are some of the tastiest, vegan Thanksgiving dishes that you must try!

1. Green Bean Casserole

Before going vegan, one of my all time favorite dishes for Thanksgiving was green bean casserole, and when I went vegan I thought that I would never be able to have that dish again. One day I happened to look up vegan Thanksgiving dishes, and one dish that came up on various blogs was a vegan green bean casserole! The blog ohmyveggies has a very simple version of this dish, with basic ingredients that you can easily find at your local grocery store. The recipe for this delicious dish can be found here.

2. Mashed Potatoes

Whenever I want to try a new recipe I always go to the Minimalist Baker. Her recipes are extremely simple, using as few ingredients as possible, and are extremely tasty as well. Her vegan mashed potatoes literally use only six ingredients, and they still taste amazing! The recipe for this dish can be found here.

3. Bread and Sausage Stuffing

The blog HotforFood always does the best at recreating typical non-vegan dishes, and this dish is no exception. In the beginning when I went vegan I would always go to their blog for whenever I had a craving. Now I just go to them because their food is absolutely delicious. The only thing to note is that this blog usually has more steps, and more ingredients for their dishes. So if you’re someone who’s new at cooking in general, then I would wait to try out some of their recipes. This dish is one of their simpler ones which is why I’m sharing it. You can find the recipe here.

4. Macaroni and Cheese

The blog Sweet Potato Soul is no exception to this list of great vegan food bloggers. She is very similar to HotforFood when it comes to intricate dishes. She has many that use numerous ingredients, and sometimes the ingredients are hard to find, so she will usually list some alternatives. What I do love about her recipes are that they always come out delicious, of course. This is the best vegan mac and cheese that I have found so far, it is super creamy, and super yummy! You can find the recipe here.

5. Apple Pie Sundaes

For desserts I will always go to the Minimalist Baker. Being vegan, sometimes it is hard to find easy dessert recipes because there is usually a lot you have to substitute, but the Minimalist Baker always finds a way to create the tastiest desserts that use as little ingredients as possible. This one has more ingredients than her usual recipes, but the steps are very simple, and the ingredients are very easy to find. You can find this recipe here.

At the end of the day I just want everyone who is vegan or who is interested in veganism to understand that veganism is not this impossible thing. It is possible to eat amazing vegan foods. I used to eat a Thanksgiving full of meat and dairy-filled dishes, and now I don’t even think about it, or want it. So just know it is very achievable to have a delicious vegan Thanksgiving, especially if it includes any of these recipes!
