This recipe was born out of frustration.

I spent the whole of last week eating out; by the end of it my skin and my bank account were equally unamused. Wary of falling even deeper into financial irresponsibility and ( worse yet) increasing the number of acne breakouts I’d been suffering form, I attempted to fix my ways; I set out trying to make a home-cooked meal with as many ingredients I already had in my fridge as possible.

So, I present, chicken and broccoli stir-fry; by no means revolutionary, it’s an easy and quick meal that’s ready in less than 30 minutes, which makes it perfect to whip up even during the middle of the week. Serve over rice or udon noodles and enjoy!

Ingredients for 4-6 servings:

  • 2 whole chicken breasts (about 1.5-2 lbs)
  • Canola oil (2 tbsp)
  • Salt and black pepper (to taste)
  • Ginger (1tsp)
  • Chilli sauce  (2 tbsp) adjust to taste!
  • Szechwan Sauce  (2/3 cup)
  • Teryaki sauce  (3 tbsp)
  • Soy sauce (1/4 cup soy sauce)
  • Broccoli (350g/ about 1 large head)
  • Snow peas (200g)
  • Salt and pepper

Method

  1. Heat the oil in a large, deep pan.
  2. Cut chicken into bite sized pieces. Season with salt and pepper and add to the hot pan.
  3. Cook chicken until fully cooked, about 8-12 minutes.
  4. Add ginger, hot sauce, schezuan sauce, teriyaki sauce and soy sauce to the pan and stir.
  5. Add broccoli and snow peas. Stir, then cover the pan.
  6. Simmer stir-fry for about 5 minutes, or until broccoli is cooked but still slightly crunchy.
  7. Serve with rice or noodles
  8. (optional) Celebrate yourself for being the financially responsible queen you are
