Three Mocktails to Make this Summer

In honor of Her Campus TCNJ’s Alcohol Awareness Week, we thought we’d put together a list of three delicious summer mocktails to try!  These recipes are quick and easy and taste just as good (if not better) than that margarita you may have wanted.  They are perfect for parties and get-togethers.  Instead of guzzling down that bottle of wine with your girlfriends, make one of these unique summermocktails.

Summer Grapefruit Mojito

(Serves 2)

Ingredients:

¼ of a pink grapefruit cut into chunks

12 shredded mint leaves

2 tbs. of honey

1 cup of ice cubes

½ cup of grapefruit flavored mineral water

 

1.      Put the chunks of grapefruit, honey, and shredded mint into a cocktail shaker. 

2.      Use a muddler to release the fruit juice.

3.      Add ½ cup of mineral water and 1 cup of ice cubes.

4.      Put on the lid and shake until combined.

5.      Pour into two scotch glasses.

6.      Add additional mineral water and ice if desired and garnish with whole mint leaves.

 

Coconut Hibiscus Cosmopolitan

(Serves 4)

Ingredients:

½ cup of coconut water

6 hibiscus tea bags

1 and 1/4 cups of water

1 cup of ice cubes

1-2 cups of lemon-lime soda

¼ cup of honey

1 lime (squeeze for juice)

 

1.      Put water and honey into a small saucepan and boil.

2.      Stir to dissolve honey.

3.      Remove from heat and add tea bags.  Put lid over top to trap the steam for four minutes.  Then remove tea bags.

4.      Once the mixture is fully cool, pour into a cocktail shaker and add one cup of ice, coconut water, and lime juice.  Put on lid and shake until chilled.

5.      Strain into chilled martini glasses.

6.      Pour lemon-lime soda into each glass.

7.      Garnish with a lime slice.

 

Blueberry Pomegranate Bellini

(Serves 6-8)

Ingredients:

1 bottle of sparkling cider, chilled

1/3 cup of pomegranate juice

½ cup of blueberry jam

½ cup of fresh blueberries

 

1.      Heat pomegranate juice in saucepan until hot, but not boiled.

2.      Add jam.  Whisk until smooth.

3.      Strain through a mesh strainer over a pitcher.  Press on mixture to release the syrup-like mixture.

4.      Let stand until cool.  Refrigerate until used.

5.      Pour 2-3 tablespoons of the mixture into champagne glasses.  Then add sparkling cider until each glass is full.

6.      Drop several fresh blueberries into each glass.
