3 Vegan Fall Snack Ideas

1. Pumpkin Chocolate Chip Muffins

These are super easy to make and don’t take long at all!

What you will need:

Wet ingredients:

Pumpkin Puree (1 cup)

Coconut Oil (¾ cup)

Coconut or Almond Milk (or any non-dairy milk, I prefer these because they add to sweetening the muffins) (¼ cup)

Honey/agave OR maple syrup (I’ve used both and found they work the same) (¼ cup)

Vanilla Extract (1 teaspoon)

 

Dry ingredients:

Coconut Sugar (¾ cup)

Whole Grain Flour (or regular flour, your preference) (2 cups)

Cinnamon and Pumpkin spice (for flavor) (2 teaspoons)

Baking Soda (1 teaspoon)

Baking Powder (½ teaspoon)

 

Vegan Chocolate Chips (mix in after making batter, however much you want)

 

2. Pumpkin Oat Balls

A great snack that has a lot of protein too!

What you will need:

Oats (1 ¼ cup)

Pumpkin puree (½ cup)

Ground Flax Seeds (½ cup)

Maple Syrup (3 tablespoons)

Vegan Chocolate Chips (however much you want)

 

Mix up all of the ingredients in a bowl. Then, form them into balls and put in the fridge for about a half hour and they are ready to eat!

 

 

3. Apple Cinnamon Oatmeal

Great for a snack or breakfast!

What you will need:

Oats (¾ cups)

Vanilla Extract (½ teaspoon)

Cinnamon (however much you want!)

Non-dairy milk (1 cup)

Next, make Oatmeal as you normally would

Then slice up an apple, put it in a saucepan and cover it with water and cinnamon. Heat it up until the apples are soft. Then combine the apples and oatmeal and enjoy!
