Do(rm)estic Goddess: Banana Bread= Pure Joy

For the second installment of “Do(rm)estic Goddess” we’re kickin’ it old school. With old bananas. No seriously though — if you’re trying to win friends, win someone over or just trying to #win, you NEED to make this! It’s quick, easy and dorm-kitchen-friendly recipe borrowed from joythebaker.com (if you haven’t already bookmarked this blog, do it. Do it now.) P.S. You’re welcome.
 

Joy’s Banana Bread
1 ¼ c. flour
½ cup brown sugar
½ tsp salt
½ tsp baking soda
¼ tsp baking powder
½ tsp cinnamon
3 tsp oil
2 eggs beaten
3 large bananas, ripe
1 cup oats
 
Preheat oven to 350 F, use butter and flour or cooking spray to coat the inside of a loaf pan.
 
Stir together dry ingredients including oats and cinnamon.
 
In a smaller bowl, mash bananas with a fork. Add oil and eggs; stir well.
 
Add wet and dry ingredients and mix well. Batter will be thick.
 
Pour batter into pan and bake until top of loaf is firm (45-50 min). Allow to cool in pan 5-10 min after baking. Flip out and cool for 10 more minutes.
 
Give to friends, roommates, or RA’s. Or keep it all to yourself. We won’t tell.
 
Extra Credit: If you want to get crazy with the creativity, feel free to throw in chocolate chips, walnuts, peanut butter or Nutella, raisins/craisins, fresh fruit (blueberries, raspberries, peaches, and sliced strawberries work well!), etc.
