Cooking on Campus: Toffee Bark

A week ago, if someone told me I could make toffee bark in a dorm kitchen, I would have never believed them. Toffee sounds like a hard candy to make, and making candy is generally a tricky task. When my sister-in-law shared this recipe with me, I was intrigued because it sounded so delicious and yet was easy enough to be made in a dorm kitchen.

To be honest, I was a little wary at first and was not confident that the recipe would turn out as planned. Much to my surprise, everything went perfectly and sweet & salty toffee bark magically formed in the Rand kitchen, and is now sitting on my desk tempting me to devour all of its crunchy goodness. If you like toffee, you have to try this recipe.

Preparation is so simple and the ingredients are cheap, and you most likely already have everything you need. This sweet & salty toffee bark would be a great study snack during finals and would make a great gift for your friends. You could also impress your family by whipping this up during your holiday baking this Christmas Break.


All you need is:  

  • 1 cup packed brown sugar
  • 1 cup butter (2 sticks)
  • 1 package fresh saltine crackers
  • 1 bag chocolate chips.
  1. Preheat oven to 400. Line a cookie sheet with tin foil, then lay out the saltines side by side until the whole sheet is covered.
  2. In a saucepan, melt butter and brown sugar until boiling. Boil for 3 minutes, stirring constantly. NOTE: If making in a dorm kitchen you can melt the butter and brown sugar in a microwavable bowl in the microwave for 3-4 minutes, stirring every once in a while.
  3. Pour the mixture over the crackers & spread evenly. Immediately place in the oven for 7 minutes.
  4. Take out and sprinkle chocolate chips evenly across it. The heat will melt the chocolate. Once melted, spread evenly with a knife.
  5. Cool in the fridge, break apart into pieces.
