Cooking on Campus: Getting Creative with Chicken

Learning to be successful in the kitchen involves learning to take advantage of store-bought ingredients that can make your life easier. Using premade dough, rotisserie chicken, shredded cheese or other store prepared ingredients can cut down on the time you have to spend in the kitchen.

While I take advantage of store-bought ingredients I also try to use mostly fresh ingredients. Learning to mix the two may take some practice, but the combination can result in easy, semi-homemade yet fresh meals.

Most of the recipes I post involve some store-bought ingredients – a necessary component to dorm room cooking, and this week’s recipe is no different. I combined Pillsbury crescent roll dough, rotisserie chicken and different seasonings to create easy chicken packets. Served with a side of vegetables or a salad, these make a quick and delicious dinner.

 I made two flavor combinations: chicken bacon ranch and buffalo chicken. For the chicken bacon ranch I mixed together the shredded chicken, ranch dressing, and crispy bacon. For buffalo chicken I added hot sauce and cheddar cheese. There is no limit to the flavor combinations you can invent for these chicken packets. Maybe Mexican, Greek, or pizza flavors ­– or maybe even combining ground beef with sausage for a meat lover’s packet? The possibilities are endless!

All you need is:

–     1 roll of Pillsbury crescent roll dough

–       1 rotisserie chicken

 

For Chicken Bacon Ranch:

–   ½ cup of ranch

–   4 slices bacon- cooked and cut up into small pieces

For Buffalo Chicken:

–  1 cup hot sauce (more or less depending on your tastes)

–   ½ cup cheddar cheese  

1.     Prepare chicken meat by removing from the bone and shredding. If you don’t want to use a rotisserie chicken, shredded chicken breasts work just as well.

2.     Mix chicken with flavorings of your choice- either bacon ranch or buffalo chicken.

3.      Roll out dough until thin. Separate along perforated lines to make triangles of dough. Place dough on a greased cookie sheet

4.     Spoon a good amount of the chicken mixture onto each triangle. Pinch together dough, being sure to seal the dough together well.

5.     Bake at 375 for 11-13 minutes, or until brown and crispy.
