Easy Vegan Dishes You’ll Want to Try ASAP

If you’re looking to cut down on the amount of animal products in your diet, try these easy recipes that are my go-to’s! They’re simple, fast, and super tasty!

 

Tofu Scramble

A yummy and filling breakfast dish! I love this recipe from Genius Kitchen because I like adding my own twist to it with veggies that I have and then serving it on top of toast, wrapped in a tortilla, or with hot sauce. It’s a really flexible dish! Try adding peppers, spinach or mushrooms.

 

Black Bean Tacos

This super quick (10 minutes!!) recipe from Delish Knowledge is a major time-saver when you’re starving but need to study for a big exam the next morning. It’s low in calories and carbs and is a great source of healthy fats, protein, and fiber. These tacos can also be easily thrown in a to-go container to be eaten at the library!

 

Chocolate Chip Cookies

When you’re itching for something sweet but don’t want a store-bought oversized cookie that’s loaded with sugar and calories, try this recipe from Cookie and Kate! I made this recipe not too long ago with olive oil and was surprised how delicious they turned out! If you’re not a huge fan of the taste of olive oil, I would recommend trying the recipe with coconut oil, as the olive oil subtly comes through when the cookies are warm.

 

Lasagna

If you’re craving comfort food, like lasagna, but are also trying to cut meat out, this recipe from Hummusapien is perfect! It’s loaded with veggies and the tofu “ricotta” is really tasty. Like the tofu scramble, it’s also super easy to add your own flair to it! I love this recipe because it makes a nice large batch that can be easily frozen for later or eaten throughout the week – we love a good meal prep!

 

Lentil Soup

A spicy, warm soup for cold winter nights! If you’re a fan of food with a bit of a kick to it, I would definitely recommend this recipe from Well and Full. It’s perfect on its own or served over rice. And lentils are a great source of protein, and you could also very easily add your favorite beans to the recipe!
