Pumpkin Chocolate Chip Bread

Winter may be approaching, but we’re not sick of pumpkin just yet! Here is a simple and delicious recipe that you can bake at home for your family, to bring to a holiday party, or for a Christmas day treat!

 

Ingredients:

  • 1 1/2 cups of whole wheat flour
  • 1 cup pumpkin puree
  • 1/2 cup sugar
  • 1/2 cup water
  • 1/4 cup olive oil (vegetable oil works fine too)
  • 2 eggs
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • desired amount of chocolate chips

 

Directions:

1. Combine all dry ingredients in a bowl (aside from chocolate chips)

2. Combine all wet ingredients in a larger bowl

3. Add the dry ingredients to the large bowl of wet ingredients

4. Sprinkle in chocolate chips – saving some to add on top

5. Pour mix into a greased loaf pan, topping off with chocolate chips

6. Bake at 350° for about 45 minutes or until a toothpick comes out clean
