Leaving home after intersession this semester was hard, quite possibly the hardest it’s ever been. Why? Because I had to leave the comfort of my kitchen to return for my 4thsemester of depending solely on a microwave. Don’t get me wrong, there’s a kitchen on both the floor above and below me, but when I have 20 minutes to eat, get dressed and trek to class, am I really going to head to the stairwell to make a gourmet breakfast? Here’s to 5 quick and easy breakfasts, dorm-style. 

 

1. Oatmeal

Yes, I know everyone on God’s green earth knows how easy it is to make oatmeal, but I promise I have a little way to spice it up. Pour some oats into your bowl and however much water you think is appropriate and microwave it for about a minute and a half, or however long it takes your microwave to cook the oats. So now when you take it out of the microwave, throw in a scoop of vanilla yogurt, a scoop of peanut butter (Crazy Richard’s is my favorite), and a handful of frozen fruit (my fruit of choice is usually blueberries). Mix the whole bowl together and dig in, I promise you won’t regret it.

 

2. Omelet

Okay hear me out, microwaved eggs aren’t actually that bad. Whether you’re in the mood for simple scrambled eggs or a veggie omelet, this option is great for you! Crack one or two eggs into a mug and whisk them with a fork, if desired, toss in a few cuts of veggies (maybe snag them from the dining hall the night before) and mix again. I always start by microwaving them for a minute and then continuing with 15 second intervals until they look cooked enough. 

 

3. PB & Bananas

My personal fave, and quite easily the simplest, is a rice cake with peanut butter and banana. Whether it’s creamy or crunchy, almond or peanut, topping a rice cake with your favorite nutty spread is made 10x better by adding a sliced banana on top. 

 

4. Avocado Toast Minus the Toast

It’s 2019, who isn’t a fan of avocado toast? You may be thinking Shannon, I don’t have a toaster in my dorm room and that’s why I said “minus the toast.” Ezekiel bread is crunchy enough, so I think it’s okay to skip out on the toasted bread just this once. Mashing your own avocado too messy? Grab a container of guacamole next time you’re at the grocery store. Perfect trendy and tasty breakfast. 

 

5. Yogurt Parfait

Looking for a simple spin on a berry yogurt parfait? Replace the granola with your favorite cereal, mine being cheerios. Layer your yogurt, cheerios, and berries in a mug for an even easier way to carry your breakfast around your room.
