Micro-Fridge Cooking: Small Kitchen, Big Possibilities- Jell-O for St. Patty’s Day!

For those days when you’re craving something that’s not on the menu at the Hub, try something new: make a dish from scratch!  Purchase students in the residence halls, don’t fear: you don’t need a fancy kitchen to make great tasting food – all you need is a microwave!  Put that MicroFridge to good use – it’s not just for making popcorn anymore. 

In this column I plan on sharing easy recipes with you, along with ingredient lists, helpful tips, and step-by-step instructions.  All of these recipes are prepared and taste-tested before they’re posted, so they’re guaranteed to be good.  (I plan on testing out vegetarian and vegan dishes too!)

So have some fun with friends and try out a recipe or two.  Give Micro-Cooking a try and remember: just because you have a small kitchen, doesn’t mean you’re limited in your possibilities!  Happy cooking!

This Week: JELL-O
With Saint Patrick’s Day coming up this Thursday, everyone wants to add a little green to their day.  Some of us will choose to deck ourselves out in green ensembles, or lacquer up our nails with some green polish – but how about eating some green food?  While a diet of spinach and green Sour Patch kids sounds heavenly to me, here’s a super simple (super cheap – about 50 cents for a box) dessert that you can whip up any time of the year!

JELL-O
For this dish, you’ll need:

  • A microwave-safe bowl
  • A measuring cup
  • Spoon
  • A bowl, to chill the jello in

Ingredients:

  • 1 (3 oz) box of Jell-O Gelatin Dessert (Lime is the way to go for St. Patty’s Day!)
  • 1 cup water, boiling
  • 1 cup cold water

Method:

  • Wash your hands before handling food!
  • The instructions on the package are easy to follow.  In a microwave-safe bowl, heat 1 cup of water in the microwave for 3 – 4 minutes or until boiling.
  • In a separate bowl, empty the Jell-o packet.  Pour in the hot water and stir 2 minutes or until the gelatin is dissolved.
  • Stir in 1 cup of cold water.
  • Refrigerate the Jell-o 4 hours or until set.  This can be made in one big bowl or smaller individual bowls for friends.  I box of Jell-o makes 4 ½ cup servings.

And for those Collegiettes™ over 21: if you want to have fun with your dessert, mix the gelatin powder with boiling water, and then instead of mixing in cold water mix in your favorite liquor (vodka is pretty popular).  Pour the mixture into shot glasses and refrigerate until set.  Jell-O shots for St. Patrick’s Day!
