Micro-Fridge Cooking: Small Kitchen, Big Possibilities- Chocolate Fudge

For those days when you’re craving something that’s not on the menu at the Hub, try something new: make a dish from scratch!  Purchase students in the residence halls, don’t fear: you don’t need a fancy kitchen to make great tasting food – all you need is a microwave!  Put that MicroFridge to good use – it’s not just for making popcorn anymore. 

In this column I plan on sharing easy recipes with you, along with ingredient lists, helpful tips, and step-by-step instructions.  All of these recipes are prepared and taste-tested before they’re posted, so they’re guaranteed to be good.  (I plan on testing out vegetarian and vegan dishes too!)

So have some fun with friends and try out a recipe or two.  Give Micro-Cooking a try and remember: just because you have a small kitchen, doesn’t mean you’re limited in your possibilities!  Happy cooking!
 
This Week: CHOCOLATE FUDGE
Ah, Valentine’s Day.  Whether or not you decide to have a Valentine this year, you deserve something sweet!  This year, instead of buying a heart-shaped box of chocolates at the drugstore, try making something homemade.  This chocolate fudge is super easy and really addicting.  Love it. 

CHOCOLATE FUDGE
For this dish, you’ll need:

  • A microwave-safe bowl
  • A glass dish
  • A spoon  

Ingredients:

  • 2 cups semi-sweet chocolate chips
  • 1 can (14-oz) sweetened condensed milk
  • Marshmallows, or any other add-ins

Method:

  • Wash your hands before handling food!
  • In a bowl, add the chocolate chips and the sweetened condensed milk. 
  • Microwave on high for 1 ½ minutes.  Remove and stir the melted chips.  If needed, microwave a minute more or until it is easy to combine.
  • Stir in marshmallows or any add-ins (nuts or dried fruit would be particularly good!).
  • Pour the mixture into the glass dish, spreading evenly along the bottom.
  • Cover and chill at least two hours, or until set. 
  • To serve, cut into squares.
