5 Easy-Peasy Microwavable Meals

Being a college student, we no longer have the luxury of asking Mom to make us a sandwich. But making a healthy meal a top priority can be a challenge. We want something fast, easy, instant, and affordable. Rather than choosing food for nutrition, we choose food for convenience. The pizza delivery coupons look tempting, but don’t give in!

It is important to make meals a top priority because this is where we get our energy to write those 10-page papers, go to practice, go to work, and sit through a three hour night class.

Here are some easy, quick, and tasty microwave-meal recipes that will help you do all that and more!

French Toast in a Mug

This French toast in a mug recipe is a fun and fast way to start off your day!

French Toast in a Mug

1-2 slices of bread- tear into pieces or cubes

Slice of butter

1 egg

3 Tablespoons Milk

Cinnamon

Vanilla

  1. Place butter slice in the bottom of the mug.
  2. Then place the pieces of bread.
  3. In a bowl, crack egg, add milk, sprinkle cinnamon, and a drop of vanilla. Mix well with fork.
  4. Pour mixture over the mug of bread pieces. Smoosh a little and let it soak into bread.
  5. Place in microwave for about a minute (or until your liking).

Quin-what? Quinoa!

These packets of quinoa & brown rice are a time saving option. Plus, quinoa is a flexible ingredient that goes well with an array of veggies and/or cheese!

Spinich and Cheese Quinoa Casserole

1 pack of quinoa and brown rice (Brand: Seeds of Change)

Optional: Vegetables, cheese

  1. Follow instructions on Quinoa & Brown rice package – Heat the packet of quinoa in the microwave.
  2. Place quinoa in bowl and top with veggies and/or cheese!

Mini Spinach & Cheese Pizzas

This pizza recipe is quick and delicious and is a great way to eat your greens! 

Mini Spinach and Cheese Muffins

1 loaf of French bread or English muffins

Vegetable oil

Spinach leaves

Mozzarella cheese

  1. Slice French bread into at least 2” thick slices. If using English muffins, split the halves open.
  2. Spread a thin layer of vegetable oil on one side of bread
  3. Place preferred amount of spinach leaves and grated mozzarella on top
  4. Microwave mini pizzas for a minute or so

Soft Tacos

Soft tacos are a fast and easy meal preparation. Whether you are a picky eater or have no limitations, you can fill the taco with whatever you want!

Soft Tacos

6-inch flour/corn tortillas

Your preferences: Black or refried beans

                        Tomatoes, peppers, onions, avocado, corn, cilantro

                        Cheddar cheese

Optional: Sour Cream, salsa

  1. Place your preferred ingredients in the tortillas.
  2. Microwave for about 1 ½ minutes.
  3. Top with sour cream or salsa.

Microwavable Peanut Butter Fudge

This recipe is a little more time consuming, but is so worth it!

Microwave Peanut Butter Fudge

2 sticks of unsalted butter

1 cup creamy peanut butter

1 tsp. vanilla extract

3 cups powdered sugar

  1. Grease and foil a baking dish.
  2. In a microwavable safe bowl, combine butter and peanut butter. Microwave for 2 minutes, stir, and then microwave for 2 more minutes.
  3. Stir in vanilla and slowly add powdered sugar.
  4. Pour into the greased and foiled baking dish. Refrigerate a couple hours, until settled.
