Simple Honey Garlic Soy Chicken
As a busy college student it may be difficult to find time to cook a nutritious meal for yourself. Meal prepping has been all the rage as it can save time, simplify your day and save your wallet. That being said, it is still difficult to find recipes that are not only doable, but are also delicious.
Look no further. I can attest that this Honey Garlic Chicken Rice Bowl is affordable, easy and incredibly tasty.

Materials Needed:
One medium pot for rice
Measuring cup
Measuring spoons
Cutting board
Knife
Medium saute pan
Small bowl
Mixing spoon
5 containers
Ingredients:
2 lbs chicken breast or thighs
1 cup of uncooked rice
2 cups of frozen broccoli
1 bell pepper
2 cloves of garlic or 1 tsp of garlic powder
¼ cup of soy sauce
2 tbsp of honey
1 tbsp of olive oil
Salt and Pepper
Optional: crushed red pepper flakes and sesame seeds
Directions:
- Cook rice according to the package. Set aside.
- Dice the chicken into bite-sized pieces. In 1 tbsp of olive oil on medium-high heat, cook the chicken for 6-8 minutes, or until cooked all the way through. Season with salt and pepper as well as optional seasonings.
- In a small bowl, mix honey, soy sauce and garlic.
- Microwave the broccoli for 3-4 minutes or until softened.
- Pour the sauce over the chicken in the pan and let cook for 2-3 minutes. The mixture will slightly thicken.
Meal Notes:
Storage: up to 5 days in the fridge
Reheat: 1-2 minutes in the microwave
Variations:
Use any frozen vegetable you prefer
Instead of chicken, use tofu, a fried egg on top or canned chickpeas. All are cheaper and allow for dietary preferences.
