Cinnamon Toast Crunch Banana Bread Muffins

If you’re a fan of baking or just love banana bread but want to spice things up, here is a recipe you need to make! Please note that I found this recipe through TikTok by the creator called  @mersgoodeats. 

Ingredients for the Muffins: 

  • 3 ripe bananas ( preferably bit it’s okay if their not ripe)
  • ½ cup of melted butter 
  • ¾ cup of  sugar
  • ½ cup of plain greek yogurt 
  • 2 eggs
  • 1 and ½ cup of all purpose flour
  • 1 tsp of baking soda 
  • 1 tsp of cinnamon or 1 tsp of cinnamon sugar 

Ingredients for the Cinnamon Crunch Topping

  • ¼ cup of melted butter 
  • ¼ cup of sugar
  • ½ cup of flour  
  • 1tbsp of cinnamon or cinnamon sugar 

Ingredient for Icing:

  • ½ cup of confectioners sugar or powdered sugar 
  • 1 tbsp of milk 

First preheat your oven to 350F. Grab a large mixing bowl,  add in your 3 bananas, mash the bananas until they’re smooth. After add in the melted butter, sugar and plain greek yogurt into the bowl and mix together until there’s a smooth consistency.

 Next add in the  two eggs and the vanilla extract and mix one more time until all wet ingredients are mixed together. 

In a separate bowl, combine all the dry ingredients together. Then begin adding your dry ingredients into the wet ingredients and start folding it together. I would suggest putting half the dry ingredients in and folding it until there’s a smooth consistency of batter before dumping in the rest of the dry ingredients. 

Make sure to have your cupcake trays or muffin trays out with the liners already in. Start scooping about 1and ½ spoonful into each cup. 

Continue this process till either all your trays are full or when you run out of batter. 

Next we will be moving on to making the toppings! 

You would need to grab a clean  new bowl and add in the melted butter and sugar and mix it before adding in the flour and cinnamon. 

Once you finish mixing the topping, take 1 spoonful and put it on top of each muffin. Then proceed to put it in the oven and bake them for 10-12 minutes. I would suggest checking in on it every 6 minutes. 

While they are baking, move on to making the icing. You would need another bowl and add in the power sugar and milk and mix until you see the icing consistency. Place the icing over each finished muffin and then you would have a cinnamon toast crunch banana bread muffin.
