As a vegetarian, I’m always on the lookout for meatless recipes that are both delicious and simple to make. However, even if you don’t identify as vegetarian or vegan, going meatless just one day a week can have a significant and beneficial impact on both your health and the health of the planet. My personal favorites are this avocado and chickpea salad that makes a filling sandwich perfect for any meal of the day, and these crispy bean and cheese burritos.

“I make breakfast burrito jars with scrambled eggs (or tofu scramble), cheese, beans, brown rice, salsa and Morningstar Farms’ meatless ‘chorizo’!” - Sabrina
