Even if Pittsburgh doesn’t want to admit it yet, it is officially fall! Which means breaking out everything pumpkin and apple spice. Here’s a compilation of 10 fall recipes to get you inspired this season.

Healthy Caramel Apple Cinnamon Waffles

Feel free to sub out the coconut oil for any kind of oil you like! And if you’re feeling particularly lazy, buy your own caramel sauce to drizzle on top. https://fitfoodiefinds.com/2016/11/healthy-caramel-apple-cinnamon-waffles/

Sweet Potato Energy Pancakes

I will definitely be meal prepping these pancakes during finals week when I need a good balance of energy and deliciousness from my breakfast. https://fitfoodiefinds.com/2017/04/video-sweet-potato-power-pancakes/

5-Ingredient Honey Sriracha Slow Cooker Chicken

Fall is the best time for easy slow cooker recipes that you can let cook while you’re watching the football game and this chicken is no exception! As it says in the recipe, you can substitute the tamari for soy sauce. https://fitfoodiefinds.com/2015/09/5-ingredient-honey-sriracha-crock-pot-chicken/

Slow Cooker Spinach Ricotta Lasagna

I just made this recipe this week! It is so delicious and is perfect if you want a healthier, vegetarian take on lasagna. Plus, I was able to get 7 servings out of this recipe. https://kristineskitchenblog.com/slow-cooker-spinach-ricotta-lasagna/

Homemade Minestrone Soup

This recipe is ridiculously easy. Essentially, you drop everything in the crock pot and let it do the work. It’s a hearty recipe and you can freeze half of it to save for finals when you are too lazy to cook. http://littlespicejar.com/homemade-minestrone-soup-slow-cooker/

Pad Thai Spaghetti Squash

Squash is a classic fall vegetable so what better way to use it than to make a spaghetti squash! I like this recipe because it is a unique take on this meal prep classic. https://tasty.co/recipe/pad-thai-spaghetti-squash

Sausage and Spinach Skillet Pizza

If you’re feeling ambitious, this pizza will beat out Sorrento’s any day of the week. I love Trader Joe’s pizza dough for a delicious crust. http://www.midwestliving.com/recipe/sausage-and-spinach-skillet-pizza/

Jess’s Healthy Banana Bread

This is my friend’s recipe and it’s SO delicious! It uses applesauce and plenty of banana to make a bread you won’t feel guilty about eating.

1/2 cup applesauce

1 1/2 cups sugar

3 eggs

1 cup mashed banana (3 bananas)

1/2 cup milk

2 cups flour

1 tsp baking soda

1tsp baking powder

1 tsp salt

1 cup chocolate chips

Preheat the oven to 350. Grease two bread pans. Mix applesauce, sugar, eggs, bananas and milk. Add in flour, baking soda, baking powder, and salt. Add in the chocolate chips. Spread evenly in the bread pans and back for 30-35 minutes.

Butternut Squash Goat Cheese Dip

Ok so if you want more ways to use squash, this is an interesting take on that trend. To all my lazy chefs, go ahead and buy some pita chips. https://www.howsweeteats.com/2015/01/butternut-squash-goat-cheese-dip/

Copycat Panera Macaroni and Cheese

Who doesn’t love Panera’s mac and cheese? But sometimes you want more than the serving they give you. That’s when you can make your own! I’d recommend using cavatappi noodles as they show in the picture because those are the noodles that Panera uses. https://www.shugarysweets.com/2014/03/copycat-panera-macaroni-cheese

Pumpkin Alfredo

Alright, I had to finish off the list with a unique pumpkin recipe. I don’t think there’s any bad way to combine pumpkin and cheese, and this recipe claims that it’s pretty healthy too! Win win situation right here. https://www.yellowblissroad.com/pumpkin-alfredo/
