Not many people know about Undercover Eggplant (Located at 421 Chestnut Street), and I am ashamed to admit that I just went there for the first time after three years of going to SUNY Oneonta. I do not know what I was doing before finding the hidden gem that is Undercover Eggplant, but I can assure you this will not be my last time going. Undercover Eggplant has sandwiches, soups, salads, and pizza, so do not worry if eggplant is not your thing. They have something for everyone, but I advise you to try a sandwich because it comes with pasta salad. It is life changing!
