Seasonal Pumpkin Recipes

With Halloween behind us and Thanksgiving on its way, it is time to indulge in all those delectable fall treats. Hot beverages, warm soups, pies, and cookies are all favorites of this time of year. However, one ingredient is consistently featured year after year in the prime foods of fall: Pumpkin.

Restaurants, coffee shops, and cooking stores have been advertising the latest and greatest in pumpkin themed recipes since the leaves turned red. From pumpkin spice lattes at Starbucks to Panera’s Pumpkin Muffie, the vegetable is everywhere!

However, NYU collegiettes can fulfill their pumpkin cravings in their own kitchen with these easy recipes from around the Internet:

1) Pumpkin Soup

Yahoo! Shine offers this recipe for what they call “The Easiest Pumpkin Soup Recipe Ever – 5 Ingredients, 5 Minutes!” The ingredients include a medium onion, one can of pure pumpkin, two cans of chicken broth, ½ cup of heavy cream, and 1 to 2 tsp pumpkin pie spice along with extra-virgin olive oil, salt, and pepper. The best part of this recipe is that you can keep the leftovers for up to 3 days! As the weather gets colder, this could be the perfect comfy cozy dinner to make for the chilly nights to come.

2) Pumpkin Seeds

Real Simple offers this recipe for Sweet and Salty Pumpkin Seeds. The recipe calls for 2 cups fresh pumpkin seeds, 2 tablespoons unsalted butter, 2 tablespoons granulated sugar, ½ teaspoon kosher salt, and ¼ teaspoon ground sugar. While this recipe has a longer bake time, the actual hands-on time is fairly short. This recipe is perfect for NYU undergrads looking to reward themselves with a treat post studying. Just pop the seeds in the oven, go work on your paper for an hour, come back and add the topping to the seeds, put them back in the oven for fifteen minutes, go proof your paper, and then you will have a delicious treat waiting for you.

3) Pumpkin Muffins

AllRecipes.com has a five-ingredient recipe for Pumpkin Muffins that take only 30 minutes to complete. The ingredients include yellow cake mix, pumpkin puree, ground cinnamon, ground nutmeg, and ground cloves. The recipe makes about 12 muffins, a perfect amount to bring to any study session or group project. The website said that they stay fresh for a week and that “they taste good even when frozen and defrosted.”

4) Pumpkin Cookies

The baking blog, Cookies & Cups, features a two-ingredient pumpkin cookie recipe perfect for NYU girls in need of a quick treat. The two ingredients are spice cake and canned pure pumpkin. If you can’t find a box for spice cake, you can try a box of yellow cake with pumpkin pie spice added. Mix the two ingredients together, bake for 15 minutes, and the cookies are done!

5) Pumpkin Spice Latte

Most people would be surprised to know that they can make their own Pumpkin Spice Lattes in their kitchens. Betty Crocker has a quick and simple recipe to make the coveted beverage. The recipe calls for milk, canned pumpkin, sugar, pumpkin pie spice, vanilla, and hot brewed coffee. For additional garnish, they suggest whipped cream and cinnamon sticks. These homemade lattes would be perfect for a lazy Sunday morning cuddling with a boyfriend or watching movies with your girlfriends.
