Pumpkin Pie Fudge

A super easy dessert that tastes just like pumpkin pie. 

Here’s what you’ll need:

  • 1 bag of white chocolate chips
  • 1 can of sweetened condensed milk
  • 2 tbsp of pumpkin puree
  • 1/2 tsp of pumpkin pie spice

Mix all of your ingredients together in a large bowl. Then microwave the mixture for 2 minutes in 30-second increments. Pour the melted mixture into a greased tray and chill until firm. 

Optional: crush graham crackers and roll small balls of the fudge in them to get a crust.

Apple Cinnamon Bread

A tasty treat that you can definitely justify eating for breakfast. 

Here’s what you’ll need:

  • Bread ingredients:
    • 2 cups of all purpose flour
    • 1 tsp of baking soda
    • 1/4 tsp of salt
    • 1/2 cup of softened butter
    • 3/4 cup of granulated sugar
    • 2 large eggs
    • 1/2 lemon juiced
    • 2 tsp of vanilla extract
    • 2 1/2 cups of apples (peeled, cored, and diced)
  • Streusel ingredients:
    • 2 tbsp of brown sugar
    • 1 tbsp of granulated sugar
    • 2 tbsp of all purpose flour
    • 1 tbsp of cold butter diced
    • 2 tsp of ground cinnamon

In a medium bowl add your butter, sugar, egg, lemon juice, and vanilla. In another bowl mix your flour, baking soda, and salt together. Beat your wet mixture together on low speed slowly adding in the dry mixture. Once finished, gently fold in your apples. Grease or line your loaf pan and then add half of the mixture in. On top add half the streusel mixture of brown sugar, granulated sugar, flour, butter, and cinnamon. Add the second half of the batter and then top with the remaining streusel. Bake at 350 degrees for about an hour.

Maple Bar Cookies

This recipe is perfect for maple lovers like me!

Here’s what you’ll need: 

  • Bar Cookies:
    • 2 cups packed brown sugar
    • 1 stick of butter melted
    • 2 eggs
    • 1 tbsp of maple syrup
    • 1/2 tsp vanilla extract
    • 2 cups all purpose flour
    • 2 tsp baking powder
    • 3/4 tsp of salt
    • 1 cup semi sweet chocolate chips
    • 1/2 cup pecans toasted and chopped
  • Maple glaze: 
    • 1/3 cup butter
    • 1 3/4 cup powdered sugar
    • 1/3 maple syrup

In a bowl beat brown sugar and melted butter. Add your eggs, beating after each addition. Stir in maple syrup and vanilla. Add flour, baking powder, and salt. Mix well and then finally stir in the chocolate chips and pecans. Spread your mixture in a greased 9 x 13″ pan and bake for 20-30 minutes at 350 degrees. Be careful not to overtake. While in the oven, make your glaze by whisking melted butter, powdered sugar, and maple syrup. Once the bars are cool, cut them and drizzle the glaze.
