Last week was Spring Break for Merrimack College. Over this vacation, my roommates and I flew down to Deerfield Beach, FL. We were lucky enough to stay with our roommate Amelia’s grandmother, Cecilia.Â
The trip started out Sunday, March 9th, flying from Logan Airport to Fort Lauderdale. This was my first time ever flying, so I was so excited! Our flight was smooth sailing and just a few hours long. I thought that I would be more nervous, but I loved watching the clouds and land from above. By the time we got to Cecilia’s house, we all got ready for bed but we were so excited to start our relaxing vacation… for the next morning!Â
Monday morning we got right up and went straight to the pool, where we were from 10:30 AM to 3:30 PM almost everyday! The weather was beautiful all week with the temperature at a high of 80 and the UV of 8 each day. We swam, soaked up the sun, and read to enjoy the peacefulness.
To end our long pool days, we would all take showers, wind down, and cook dinner. We loved being able to hop in the kitchen and make some delicious meals each night. On Monday, we had stir fry with a mix of rice, egg, chicken, and various vegetables. Next, we had to go for the classic Taco Tuesday with ground turkey, all the amazing fixings, and paired it with chips and salsa. On Wednesday, we treated ourselves to Legends Tavern in Deerfield Beach, FL. We then found ourselves at Larry’s Ice Cream in Coral Springs for a sweet treat! (definitely recommend). On Thursday, we each made our own mini pizzas with the basic toppings of sauce and mozzarella cheese. And for our last day on Friday, we ended it with tortellini and sauce. It was the PERFECT meal to have before the flight to hold us off for the night.
One night after dinner we decided to venture out to Deerfields main beach! We stopped by to capture some great Instagram pictures and take in the beautiful sunset view. Then, we went shopping for souvenirs to remember the trip. And after all that shopping we needed to get some ice cream again at another local shop to end the night!
By the end of the vacation we had each finished a book! Sarah read Just for the Summer by Abby Jimenez, I read The Long Game by Elena Armas, Ailish read Pucking Wild by Emily Rath, Violet read Ready or Not by Cara Bastone, and Amelia read Better Than the Movies by Lynn Painter. So if you are looking for a good book, read one of those because we all LOVED them!
