New Healthy Recipe to Try!

Making an attempt to be a better self, many college women enter their university with goals to eat healthy and exercise. Many, however, fall off the bandwagon after a couple of weeks. To accommodate the busy life of a college woman, Her Campus Mercer will feature weekly recipes that are simple, inexpensive, healthy, but most of all delicious! This caprese salad is light and refreshing and less than 100 calories. This salad is perfect for a cooling snack after a long day of classes.
 

Caprese Salad
 
4 medium tomatoes chopped
¾ cup of diced mozzarella
2 tablespoons chopped parsley
 ¼ cup chopped basil
Salt and pepper to taste
Olive oil
 
Chop all of the ingredients into bite-size pieces. Mix in a large mixing bowl and stir. Add a drizzle of olive oil if desired.
