COVID-19 has changed every aspect of our daily lives. The shift to working-from-home and online school has been a difficult transition for many to make. While motivation can be hard to come by, it is important that we remember to do things that make us happy. Recently, something that has been bringing me joy is cooking for the people I live with. Below I have shared five delicious recipes that I make ALL the time. The fettuccine alfredo and caprese chicken make for an amazing dinner. As well, homemade meatballs are a delightful addition to a classic spaghetti, and the peanut noodle sauce is a quick and easy make for lunch. Finally, I’ve included a recipe for pancakes for one, for a cozy Sunday morning breakfast or a fun dinner. I hope you all enjoy these recipes as much as I do.
