Thinking Spring: Healthy Meals to Get You Through Finals

This article is written by a student writer from the Her Campus at McGill chapter.

Montreal may still look like a winter wonderland, but I assure you, ladies, spring is on its way! The light is lengthening, the sun getting stronger. The birds (such as they are in the city) are starting to sing, and the merry trickle of meltwater is starting to fill the streets with its music. Soon, crocuses will be poking up their heads, trees budding, layers peeling off right and left.

What can we do to hurry it along? Certainly, in the weeks running up to finals, few of us have the leisure to gambol over the mountains all the live long day, or fill our flats with blossoms.

But we all must eat! Here are a few ideas for ringing in the changes and bringing a bit of brightness to your plate.

  • If you’ve been eating hummus all winter, why not try some cheery Sunshine Spread, made with bright yellow split peas instead of the usual chickpeas? http://ohsheglows.com/2013/03/…
  • Trade in macaroni and cheese for some greener fare—pasta and greens are a beautiful pairing.  Here’s one idea, but play around with whatever you find at the grocery store! http://www.101cookbooks.com/ar…
  • Salad days are coming.  Here’s an option that bridges the gap between hearty and light, perfect for sun-kissed, but chilly days! (If you’re vegetarian, try substituting some crumbled feta for the sausage.) http://glutenfreegirl.com/spri…
  • Berries aren’t quite in season in Montreal, but sometimes it’s too hard to wait.  A berry crumble is just the thing to finish off a dinner with friends on the first day you can open the windows! http://www.cannellevanille.com…
