Quick and Easy Recipe: Spicy Chickpea Lettuce Wraps

Looking for a new and easy healthy recipe? I’ve got just the one! These spicy chickpea lettuce wraps are perfect for a delicious and healthy lunch or dinner. 

I usually like to incorporate a few healthy meals throughout the week, but recently I’ve gotten bored of the recipes I usually make — especially since I’m a picky eater and I tend to just stick to a few recipes. So, I searched for some new healthy recipes, and ended up making these tasty chickpea lettuce wraps! These are super easy to make, and are really likeable — even picky eaters like myself can enjoy them. 

Not only is this recipe quick and easy, but it’s also vegan! If you’re looking for a simple and tasty vegan recipe, make sure to try out these spicy chickpea lettuce wraps. They are also super customizable, as you can also add meat or any other toppings, such as onions, carrots, etc, and make it to your liking!

Chickpea lettuce wraps

Here’s what you’ll need:

(Serves 2 people)

  • 1 can drained chickpeas

  • ½ tsp garlic powder

  • ½ tsp paprika

  • ½ tsp chili powder

  • ½ tsp onion powder

  • 2-3 tsp hot sauce

  • ½ lemon (optional)

  • Romaine lettuce

Instructions:

  1. Add the drained chickpeas to a skillet or pan over medium heat. Add the garlic powder, paprika, chili powder, onion powder, and hot sauce, and stir well. 

  2. Saute mixture over medium heat for a few minutes, or until the chickpeas are a little crispy.

  3. Divide the chickpeas onto leaves of lettuce and top with more hot sauce and/or lemon juice if desired.
