It is officially fall season, which means the holidays are coming up. For all you vegans out there, here is a recipe for soft pumpkin vegan cookies, My favorite vegan cookie recipe!!!
INGREDIENTS:
2 cups of all-purpose flour
½ cup of whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground ginger
½ teaspoon salt
1 cup of granulated sugar or coconut sugar
½ cup of brown sugar
½ cup of vegan margarine or coconut oil
2 cups of canned pumpkin
1 teaspoon of vanilla extract
*OPTIONAL: add vegan chocolate chips
DIRECTIONS:
PREHEAT oven to 350 degrees
COMBINE flours, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt
BEAT sugar and vegan margarine or coconut oil into a separate bowl
BEAT in pumpkin and margarine together
BAKE on a cookie sheet for 15-18 minutes
