The Blonde Baker: Mermaid Pie

Have you seen Waitress? If you haven’t, then you must!. It is one of the most empowering movies for woman. Waitress is about Jenna, played by Kerri Russell, who is trapped in an unhappy marriage. She bakes her way through the movie, each pie resembling something going on in her life. I’m sharing a recipe from the movie called “Marshmallow Mermaid Pie.” In the movie,  Jenna makes this pie for her doctor. I’m not sure exactly why it is called “Marshmallow Mermaid Pie,” but I remained true to the name used in the film. My assumption is that it is named for the different colored marshmallows you can top the pie with, resembling a colorfully scaled mermaid’s tail. I first made this recipe last summer; I was going through my pie phase. This is when I attempted to bake a different pie every week, and this particular recipe was a hit. My favorite part of this pie is the crust – I just love graham cracker crust! The coconut shavings make the typical graham cracker crust even yummier. This recipe is perfect for those with a sweet tooth, as it is super sugary and sweet!

 

Ingredients

10 graham crackers

½ sweetened flaked coconut shavings

¼ cup butter melted

34 large marshmallows

½ whole milk

1 ounce unsweetened or dark chocolate shavings

1 ½ cups heavy whipping cream

**Topping: mini colored marshmallows/sprinkles

 

 

Directions

Pre-heat oven to 350 degrees.

Combine coconut and graham crackers in food processor until they become crumbs. Combine the crumbs with melted butter. Press graham cracker mixture into a greased pie pan. Bake for 10-15 minutes or until golden J (your kitchen should be smelling good right about now).

Heat marshmallows and milk in a saucepan over low heat until marshmallows are melted and smooth. Stir constantly to prevent any burning and lumps. Remove from heat and let the marshmallow mixture cool.

In a large bowl with an electric mixer, beat heavy whipping cream until stiff peaks form—basically you are making whipped cream. Fold in the cooled marshmallow mixture into the whipped cream. Add the chocolate shavings. The chocolate will help balance out all the sweetness in the filling. Spoon the filling into the cooled graham cracker crust.

Refrigerate pie for at least 5 hours, or cover and refrigerate overnight.

Top the pie with marshmallows, sprinkles, chocolate, or even gummy bears. You can top it with whatever you’d like to make it pretty!
