Meal in a Mug: Salted Caramel Cake

*Spray mug with non-stick cooking spray before using

1 tbsp water

1 tbsp butter

2 tbsp packed dark brown sugar

2 tbsp beaten egg

¼ tsp vanilla extract

3 tbsp all-purpose flour

1/8 tsp baking powder

¼ tsp salt

2 soft caramel candies or chocolate-covered caramel candies

  • In the mug, microwave water and butter on High for 30 secs or until mixture is hot and butter is melted. Let stand for 1 minute. 
  • Using a fork, whisk in brown sugar, egg and vanilla. Still using the fork, beat in flour, baking powder and salt until very well blended. Microwave on High for 45 seconds. 
  • Place candies in center of mug and push them gently into the cake. Microwave on High for 45-60 secs or until firm to the touch and risen. Let cool slightly or entirely in mug. Eat directly from mug.

This cake was actually really easy to make. There are quite a few ingredients in it, but it’s worth it. Instead of using regular caramels, I used chocolate caramels I had from a Valentine’s Day present (thanks Mom). It was still pretty delicious, especially with whipped cream on top. The cake was spongy and tasted good, but it wasn’t perfect enough to be a 10. I highly recommend using a cooking spray (or even brushing butter on the inside) because the cake didn’t stick at all and it was easy to clean. This is a great dessert to make if you want something that isn’t chocolatey, but still want an after dinner treat.
