Easy Quarantine Cookies

Now that we’ve been away from campus for a few weeks, you may be running out of things to do at home. If you’re looking for an easy, fun, and tasty activity, try baking for you and your quarantine crew! Below, I’ve listed three cookie recipes made with common ingredients, so that you can avoid a trip to the store. All of the recipes are also gluten-free, so that everyone can enjoy them. 

 

Peanut Butter & Jelly Cookies

1 cup peanut butter (chunky or smooth … Your choice!)

1 cup white sugar

1 egg

1 tsp vanilla extract

2 tablespoons fruit preserves, any flavor

  1. Preheat oven to 350° F
  2. In a medium bowl, mix together peanut butter, sugar, egg, and vanilla to make the dough
  3. Drop tablespoons full of dough onto a parchment paper-lined baking sheet
  4. Use a spoon to make a little hole on each cookie
  5. Fill that hole with your jam or jelly
  6. Bake for 8-10 minutes
  7. Let cool and enjoy!

 

“Chocolate Chip” Cookies

1 banana

1 cup peanut butter

½ cup sugar

1 egg

1 tsp vanilla

½ tsp baking soda

¼ tsp salt

1½ cups chocolate chips

  1. Preheat oven to 350° F
  2. Combine everything in a bowl
  3. Fold in chocolate chips
  4. Form dough into 1 inch balls and drop onto parchment-lined baking sheet
  5. Bake 9-10 minutes
  6. Cool and enjoy!

 

Chocolate Brownie Cookies

3 cups powdered sugar

¾ cup unsweetened cocoa powder

1 tsp salt

2 egg whites 

1 large egg

4 oz chocolate chips

1 tsp espresso powder (optional but makes the cookies richer)

  1. Preheat oven to 350° F
  2. Whisk powdered sugar, cocoa powder, and salt in a large bowl
  3. Whisk egg whites until stiff peaks
  4. Fold in egg whites, whole egg, and chocolate into the dry mixture
  5. Spoon batter onto parchment-lined baking sheet, leaving them about 2” apart because they’ll spread
  6. Bake for 14-16 minutes, until cookies are puffed, cracked, and set around edges
  7. Transfer to a wire rack, cool, and enjoy!
