Healthy Breakfast Bowls to Make

If quarantine makes it hard for you to get out of bed, don’t worry! You are not alone, I feel the same way. I have been trying to come up with creative ways to spice up my day and add a light to my life. One of those has been my newfound love for cooking and making food. I have found some AMAZING breakfast bowls that make it just a little easier to get out of bed and have something to look forward to.

Tropical Smoothie Bowl

 Tropical smoothie bowl. This one is so easy to make. I froze some canned pineapples and half of a banana (peeled). When it was time to make this smoothie bowl I took the pineapple and banana out of the freezer and added almond milk until there was enough liquid to blend it. Once I made the bowl I topped it with sweetened coconut, berries, chia seeds, and granola! 

Ingredients: 

½ banana frozen 

½ can of frozen pineapple 

Almost milk 

Chia seeds 

Sweetened coconut 

Granola 

Berries 

Orange Smoothie Bowl

I used orange juice and blended it with some orange juice and yogurt. For toppings I again reached for granola, sweetened coconut, and some berries! 

Ingredients

Smoothie bowls are a great way to make it feel like you are on vacation at your own home! Any mix of fresh and frozen fruit with a liquid (plant milk, water, or orange juice) and maybe some yogurt are always safe! Add granola, fruit, nuts, chia seeds, honey, nut butters, or anything else your heart desires!  I’ve also seen pinterest recipes that make matcha or chocolate smoothie bowls.

Breakfast Salad

Breakfast salads? YES PLEASE! My mom and I are obsessed with this breakfast salad from one of our favorite local sandwich shops, but since we are no longer able to get it we decided to make a DIY version. This one does take a little longer to make, so I save it for the weekend,but let’s be honest during their quarantine if you wanna take some time to make a nice breakfast I say go for it! First, cook some quinio. Then fry an egg. I personally like over medium, but over easy would be great if you love a runny egg. Put the arugula in a bowl, then the quinoa. Drizzle some pesto, add some avocado chunks, and some feta cheese. Place the egg on top and ta-da… breakfast salad! 

Ingredients: 

1 egg 

Quinoa 

Arugula 

Feta cheese 

Avocado 

Pesto 

Sweet Potato Bowl

This is another one that takes time, but it’s super easy. I put a sweet potato in the oven at 400 degrees and leave it in for an hour. If you workout in the morning before breakfast this is super easy, but if you eat right when you wake up you can always cook the sweet potato the night before or microwave it in the morning. I then added almond milk, honey, coconut, and chia seeds and mashed that in the bowl. I topped it off with my new favorite food… fried bananas. To make the bananas put some coconut oil in a pan and slice some bananas into that heated pan. Let the banana sit for a couple of minutes before flipping. They are so sweet and delicious and the perfect topper for this sweet potato bowl, an oats bowl, or on their own honestly. 

Almond Joy Oats

I am basic and I love oats! I have yet to become an overnight oats girl, but I think it’ll happen once the world picks up again and I can be in a rush to leave my house. That being said, I love a warm bowl of oatmeal in the morning.I have a HUGE sweet tooth, and so this is a great way to be healthy but also get that chocolaty taste. I add cacao powder into my oats (the one I have is from trader joes). I then placed some sweetened coconut and sliced almonds on top. It wasn’t too sweet but satisfied the sugar cravings I always have! 

Pumpkin Oats

There are so many fun ways to spice up some normal oats, and one of my favorites is with some pumpkin. I mix canned pumpkin into my oats with some honey or agave and some chia seeds. In this one I added my friend bananas again! This would be super yummy with some coconut as well or maybe some cinnamon. This bowl does have a fall vibe, but I love it all year round.  

Peanut Butter Oats

Again, I LOVE oatmeal, and this is the easiest oatmeal recipe EVER! I make my oats in the microwave, then stir in some peanut butter, chia seeds, and banana (not fried this time but you so could). Again, you can always add coconut, walnuts, pumpkin seeds, or anything else your heart desires. 

Banana Nut Oatmeal

This might be one of the easiest oats I have made, but one of the yummiest! I slice a banana (or a half depending on the size of the banana) and mix it in. I have seen recipes where people mash half the banana and mix that into the oatmeal base, which would be really good with this! I then top my oatmeal with cinnamon, walnuts, and a little bit of honey for some extra sweetness. 

 

I hope this helps add a little bit of sunshine to your morning! I find it so fun to get creative with my meals. I have found that thinking about what I eat for breakfast helps me to get out of bed in the mornings some days, and anything we can do for ourselves during this time is important.
